Ingredients
3 Ripe Bananas Mashed
¼ Cup Coconut Oil
1 Cup Splenda
1 Cup All Purpose Flour (sifted)
1 Teaspoon Baking Soda
1 Teaspoon Vanilla Extract
Instructions
Preheat oven to 375 degrees.
Spray loaf pan or muffin tin with nonstick cooking spray.
In a large bowl beat together bananas, coconut oil and Splenda until well mixed.
Add in sifted flour and baking soda until just moistened.
Mix in vanilla and pour into already sprayed loaf pan or muffin tin (if making muffins spoon until each tin is approximately ¾ full)
Bake at 375 degrees for 35-40 minutes if loaf and 20-25 minutes if muffins. Cook times may vary slightly depending on type of pan (glass or metal) and individual ovens.
Makes 24 mini muffins = 2 points per muffin
Make 10 servings per loaf = 4.8 points per slice
Or make 12 serving per loaf = 4.25 points per slice
Lower the point values per loaf by substituting 1/4 cup plain Greek Yogurt & 1 egg white instead of the coconut oil – you bring it down to 3 points per slice if making 12 slices instead of 10.
